You'vew been kidnapped by a playfully cruel, food-obsessed genie

I thought this might be an interesting thought experiement.

As the title says, you've been abducted by a weird and cruel genie. You're trapped in a kitchen that's stocked with everything a kitchen or food processing place could ever need, with one exception - there are no ingredients of any kind. The genie tells you that you can have an unlimited supply of water and any other ingredient that you choose.

The rules are that the ingredient that you choose must be a base ingredient. So you can have wheat or semolina or whatever and use it to make pasta, but you can only use water in the recipe, not eggs. You could have eggs, if you wanted, but then you couldn't have the wheat. You certainly can't choose something like "bolognase sauce" as your ingredient.

You can prepare your ingredient any way you choose, but the preparation can't involve adding anything else. So you could fry anything you wanted, but you can't add oil, margarine, or butter, so you'll either have to choose an ingredient which is fatty enough to fry on its own, or choose something that contains some fat that can be extracted from it in some way and used to fry with. Remember, you have an infinite supply of this ingredient, so it doesn't matter how much of it you'd need, just whether or not it's actually possible.

The question is this - which ingredient would you be able to survive for the longest eating? No matter what you chose you'd eventually die of malnutrition or some diet-related disease like rickets, but some ingredients would have to be better than others.

My guess would be some kind of pulse, as it would be high in vitamins and protein.

As a bonus question, what would allow you to have the most interesting diet? I would think perhaps the potato.
