Root canals, but why?

Apparently, I need a root canal. :( As explained to me, once the bacteria responsible for tooth decay pierces the dentum layer and reaches the chamber with the nerves and blood vessels, the only remedy is to drill in there, scrape out all all the tissue, and fill in the cavity.

We don't normally treat bacterial infections by removing all of the potentially infected tissue, and I have to wonder why it's the normal procedure in this case. Is the bacteria responsible for tooth decay (gingivitis?) just impressively resistant to antibiotics? And why remove all of the tissue, as opposed to just the infected bit, plus maybe a margin for error?
