Gender not set until puberty? (Speculation thread)

How would our societies be different if nobody knew what gender they would be until they reached puberty? I think there would be less "pre-loading" expectations for a child as there would be a 50% chance they would be slightly or wildly wrong (if such pre-loading even existed in that society.)
