Single Device Seems to Hog Resources

OK, not sure if this is actually resource hogging, so maybe one of the IT guys here will understand what is happening and know if there is a solution.

We have a Microtek Scanmaker i900 using SilverFast AI scanning software. This is all running on a 64 bit Windows 10 Pro Box with plenty of RAM, 12GB (the CPU is Intel(R) Core(TM) i5-6500 CPU @ 3.20GHz - 4 cores)

The problem is that while the scanning software is running and idle, everything is fine, but as soon as we ask the scanner to do actual work, say, scanning an image, the whole computer slows down. For example a number of open programs go non-responsive. If you have a document open and you try typing, the letters don't appear immediately, they appear, one at a time at about two second intervals. As soon as the scan completes, the rest of what you were typing finishes immediately.

I tried running Windows XP inside a VM and installing the software there, and this fixed the issue so I do not believe it is a CPU capacity issue.

Unfortunately, you cannot activate Win XP any more so that stopped working and we had to revert to using the software on the Win 10 machine.

Any clues what is happening here and anything I might do to address the issue?
