PC Builders: OS Question

Since the timely demise of my trusty desktop of 10 years (power supply fried several components, very ugly but it was a quick death at least), I've decided to go on and try to build my firstPC. I'm going with a budget Intel build which should be a solid machine if I don't **** it up somehow and I think I've got a good understanding of what I'm to do with the hardware.

It's the OS what's busting my hump at the moment.

Admittedly I haven't talked to an actual human on the subject and have managed to fill my brain with chaff from google sources, but I've always been under the impression I could buy a retail copy of Win 8.1 and install it on a bare drive and be done with it. Several sources tell me that this isn't the case and I'll need to buy a "system builders" licensed copy because a retail version won't install on a bare drive.

So I'll ask you PC builders here in a poll:

Get 8.1 retail box, buy the system builder licence, **** it all and install Unbuntu, Buy a Mac, have a potato and lastly, get bent.
