Yes, the whole Michelin star thing is just a money-making exercise for both the guide and the restaurants featured in it. Yes, it's moved a million miles from its original objective - to guide hungry travellers. Yes, this could just be the guide attempting to make itself relevant but this does seem to be a clear indication that Vegan cuisine can be of the very highest quality.
